Mee Goreng Mamak

This is the most popular version of the fried yellow egg noodles. The Chinese and Malays also have their own versions. Mee mamak noodles are fried in a dark soy sauce. Ingredients include shrimp paste, chicken, egg and crushed peanuts. It is served with several halves of mini lime which should be squeezed generously over your noodles.

Stir fried egg noodles with prawn, chilli, vegetable on fritters, potatoes and bean curd.

Preparation time: 90 minutes.

For the noodles Ingredients:
200 gram yellow egg noodles
3 tbs mamak paste
40 gram solo prawns (small shrimps)
40 gram sliced chicken breast (no bones, no skin)
1 pc whole egg
10 gram chopped garlic
25 gram diced local bean curd
25 gram tomato wedges
20 gram fried potato cubes
20 gram vegetable/prawn frittes
30 gram bean sprouts
30 gram mustard vegetable leaves & stem
1 tbs seasoning with salt dark soy sauce

Garnish:
Fried onions, red chilli and cilantro leaves. A small bowl of sliced red chilli mixed with soy sauce.

Method:
Poach the prawns in fish stock and the chicken in water until half cooked. Heat the oil and sauté the garlic until fragrant. Add the egg and the paste, saute again and add the rest of the ingredients. Stir fry until well combined and mixed together. Adjust the seasoning.

For the Mee Mamak paste Ingredients:
500 gram dried shrimps
150 gram belacan (shrimp paste)
500 gram sliced onions
500 gram sweet chilli
1 kg sauce chilli
100 gram paste coriander powder
100 gram Madras powder
300 gram brown sugar
1 pkt crushed peanuts
500 ml palm oil

Method:
Blend the dried shrimps and the shrimp paste as well as half of the onion in a food processor. Heat the oil and saute the other half without colour. Add the blended ingredients and cook it until the oil comes out. Add the chilli paste, chilli sauce, coriander powder, Madras powder, brown sugar and the nuts and mix well. Keep the paste in a jar for further use.

For the veg. frittes Ingredients:
100 gram white cabbage julienne
10 gram chopped red chilli
10 gram chopped green chilli
300 gram chopped prawns
50 gram sliced onions
50 gram chives
20 gram cut turmeric powder
1 kg plain flour
2 pc whole eggs
2 tbs baking powder
30 gram corn flour
100 gram rice flour
25 ml butter cubes
Seasoning with salt and peppermill.

Method:
Combine all the flour, turmeric, egg and salt and pepper. Melt the butter and saute the vegetables. Add it to the flour mix and stir well. Adjust the seasoning. Shape it into round flat pieces and deep friy until golden yellow. Then cut them into small square pieces.
